Sorry, a bit delayed as always. Our work weeks always start pretty busy, but I’m happy to stay we started out great. We prepped fruit, breakfasts and a great dinner that will get us through Wednesday, and then will throw another crockpot meal together to finish off the week.
Our first meal of the week was Crockpot Ribs and Kraut with Apples. It’s one of my favorites, as my grandma used to make something similar growing up, so the smell always makes me think of her house, which I love. We gave Kaitlan kraut for the first time and she slurped it up like spaghetti, I think my grandma would be pretty proud.
Lunches are chicken sandwiches with cheese sticks and Kaitlan is enjoying chicken cubes with Greek yogurt and watermelon.
Our latter half of the week will be crockpot fajitas, which is something we’ve done a few times. It’s just so easy, and it can be disassembled for Kaitlan.
I feel like meal planning is a little bit of self-discovery. Someone asked me the other week about planning resources, and there are so many out there, each tailored to goals and situation. You really have to know not only what you can do, but how you are okay with eating. I know a lot of people who prep the whole week and eat out of tupperware and jars. I know people who eat the same thing all week, I know people who prep something different each day. I love reading about how other people manage their day-to-day lives, so I’m constantly learning new tricks and methods to try. But in the end, I feel like our “mission statement” regarding food comes down to wanting to maximize our time with Kaitlan wherever possible, opting for simple and easy meals, but not convenience foods or living out of tupperware. We enjoy food, and want to enjoy meals together. Life is too short to be boring or restrictive.
It’s not perfect, but we prep twice a week and typically hit the grocery store for a quick stock up on Friday. We try to have healthy snacks on hand and a meal in the freezer if we can help it. Definitely a work in progress, but when you have a baby, life is always kind of in flux right?
