Another week down of meal planning down! We got a little off track last week with Erica being out-of-town for work, but we still managed to have some great meals over the past two weeks.
Some trends are definitely forming as the weather cools down. Squash has been on the menu quite a bit. We picked up two butternuts from the farmer’s market, and it made all our meals for one week and then some. We’re also doing quite a few one-dish meals, which are not only warm and hearty, but makes clean-up even easier.
Easy Butternut Squash Soup
Slightly adapted from this recipe. Super easy to put together, and you can thin it to your desired consistency (recipe made it somewhat thicker than we expected.)
Butternut Squash and Spinach Hash
A simple hash of eggs, butternut squash, red potatoes, spinach, tomatoes and bacon. Absolutely to die for, and you don’t need a recipe to make it work.
Fish Taco Bowls
Made from this recipe. We haven’t done fish around here in a long time. The seasoning was perfect and it was super easy to put together after workouts. I only wish ours looked as pretty as theirs!
Corned Beef and Cabbage
A request by Erica’s husband Adam — and I’m so glad he did because I’d never had it before and loved it! Neil did an amazing job with the cabbage and the leftover corned beef is perfect with in stir fries!

We did all the prep for this week last night, and I am SO excited to share. Every week I think our meals can’t get much better or less stressful, but I’ve been proven wrong yet again. I think more people might be joining us.
